  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked white or brown rice
  • 1 1/2 cups frozen or fresh corn kernels
  • 1/4 cup mayonnaise or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1/4 cup crumbled Cotija cheese (or feta as substitute)
  • 2 tablespoons chopped fresh cilantro
  • Optional: 1/4 teaspoon Tajín seasoning

Instructions

  1. Season the chicken pieces with chili powder, cumin, smoked paprika, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
  3. Add the corn kernels to the same skillet. Cook, stirring occasionally, until the corn is lightly charred, about 5 minutes.
  4. While the corn cooks, prepare the lime crema: In a small bowl, whisk together the mayonnaise (or Greek yogurt), 1 tablespoon of the lime juice, and a pinch of salt.
  5. To assemble the bowls, divide the cooked rice among four bowls.
  6. Top the rice with the cooked chicken and the charred corn mixture.
  7. Drizzle the lime crema evenly over the chicken and corn.
  8. Sprinkle with Cotija cheese, fresh cilantro, and Tajín seasoning, if using. Serve immediately with the remaining lime juice for an extra zest.
