Ingredients
Scale
2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup milk
2 large eggs
1 cup fresh apples, peeled and finely diced (about 2 medium apples)
1 teaspoon vanilla extract
Vegetable oil, for deep frying
For the Glaze: 1 1/2 cups powdered sugar, 3 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt. This forms your dry base.
In a separate bowl, lightly beat the eggs, then whisk in the milk and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
Fold in the finely diced fresh apples until they are evenly distributed throughout the batter.
Pour vegetable oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2 inches. Heat the oil to 350 degrees Fahrenheit (175 degrees Celsius). Use a thermometer to monitor the temperature closely.
Carefully drop the batter by heaping tablespoons into the hot oil, ensuring you do not overcrowd the pot. Fry about 3 or 4 fritters at a time.
Fry for 2 to 3 minutes per side, turning once, until the fritters are deep golden brown and cooked through. They should be crispy outside and tender inside.
Use a slotted spoon to remove the fritters and place them on a wire rack lined with paper towels to drain excess oil.
While the fritters cool slightly, prepare the glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, a half teaspoon at a time, if the glaze is too thick.
Dip or drizzle the warm fritters generously with the vanilla glaze. Allow the glaze to set before serving your homemade apple fritters.
Notes
For a lighter texture, ensure your batter is not overworked; mixing too much develops gluten, resulting in tough fritters.
If you prefer baked apple fritters, arrange the spoonfuls of batter on a parchment-lined baking sheet and bake at 400 degrees Fahrenheit (200 degrees Celsius) for 12 to 15 minutes, flipping halfway through.
For air fryer apple fritters, place them in a single layer in the basket and spray lightly with cooking spray. Air fry at 375 degrees Fahrenheit (190 degrees Celsius) for 8 to 10 minutes, flipping halfway.
