  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits (optional, for extra flavor)

Instructions

  1. Preheat your oven to 250°F. Line two large baking sheets with parchment paper.
  2. Place the Chex cereal in a very large bowl. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the mixture boils. Let it boil for exactly 1 minute without stirring.
  4. Remove the saucepan from the heat. Quickly stir in the vanilla extract, baking soda, and salt until combined. The mixture will foam slightly.
  5. Immediately pour the hot toffee mixture over the Chex cereal. Gently stir until the cereal is evenly coated. Be careful not to crush the cereal pieces.
  6. If using toffee bits, stir them in now.
  7. Spread the coated cereal mixture in a single layer onto the prepared baking sheets.
  8. Bake for 25 minutes, stirring gently every 5 minutes to prevent burning and promote even crisping.
  9. Remove from the oven and let the mix cool completely on the sheets. The coating will harden as it cools, creating that perfect crunchy texture.
  10. Once fully cooled, break apart any large clusters and store the sweet and salty snack mix in an airtight container.

  • For the best sweet and salty balance, you can add 1 cup of salted nuts (like pecans or peanuts) along with the cereal before coating.
  • Do not overcook the toffee mixture, as this can lead to a hard, brittle coating instead of a crisp one. One minute of boiling is key.
