  • 1 cup cooked and mashed sweet potato (about 1 large sweet potato)
  • 1/2 cup melted coconut oil or butter
  • 1/2 cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour (for gluten free/paleo option)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine the mashed sweet potato, melted coconut oil, maple syrup, eggs, and vanilla extract. Whisk until the mixture is smooth.
  3. Add the cocoa powder, almond flour, baking soda, and salt to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix.
  4. Fold in the optional dark chocolate chips.
  5. Pour the batter into the prepared baking pan and spread evenly. Sprinkle a few extra chocolate chips on top if desired.
  6. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for a fudgy texture.
  7. Let the brownies cool completely in the pan on a wire rack before slicing. Cooling allows them to set properly for the best fudgy texture.
