Follow this foolproof technique for the best oven roasted sweet potatoes. You achieve perfectly crispy edges and an impossibly tender center using simple garlic and rosemary seasoning. This is the ultimate healthy vegetable side dish for quick weeknight dinners or holiday feasts.

Ingredients

Scale
  • 3 large sweet potatoes (about 2.5 lbs)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Position the oven racks in the middle and upper third of the oven.
  2. Wash the sweet potatoes well. You can peel them or leave the skin on, based on your preference.
  3. Cut the sweet potatoes into uniform 1-inch cubes. Uniform size helps them cook evenly, which is key for achieving crispy edges.
  4. In a large bowl, combine the sweet potato cubes with the olive oil. Toss until every piece is lightly coated.
  5. In a small bowl, mix together the kosher salt, black pepper, garlic powder, dried rosemary, and red pepper flakes, if using. Sprinkle this seasoning blend over the oiled sweet potatoes and toss again until the spices adhere evenly.
  6. Spread the seasoned sweet potatoes in a single layer across two large, rimmed baking sheets. Do not overcrowd the pans; overcrowding causes steaming instead of roasting, preventing crispiness.
  7. Place one baking sheet on the middle rack and the second on the upper rack.
  8. Roast for 20 minutes. After 20 minutes, carefully switch the positions of the pans (middle goes to top, top goes to middle) and toss the potatoes on each sheet.
  9. Return the pans to the oven and roast for another 10 to 15 minutes, or until the edges are deeply caramelized and crispy, and the centers are soft when pierced with a fork.
  10. Remove from the oven and serve immediately as a healthy roasted vegetables side dish.

Notes

  • For the crispiest results, ensure your baking sheets are large enough so the potatoes are not touching. Use two sheets if necessary.
  • If you prefer a sweeter profile, substitute 1 tablespoon of the olive oil with 1 tablespoon of maple syrup or brown sugar during the initial toss.
  • These sweet potato cubes are excellent for meal prep and reheat well in an oven or air fryer.
