12 ounces white chocolate chips
1/2 cup creamy peanut butter (or substitute with sunflower seed butter for nut-free option)
1 teaspoon vanilla extract
1 (3.4 ounce) box instant pistachio pudding mix
2 cups powdered sugar
1/2 cup chopped pistachios (optional mix-in)
Instructions
Measure the Rice Chex cereal into a very large bowl. Set aside.
In a medium microwave-safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and completely melted. This usually takes 60 to 90 seconds total.
Stir the vanilla extract into the melted chocolate mixture.
Pour the chocolate mixture over the cereal in the large bowl. Gently fold the cereal until it is evenly coated with the chocolate mixture.
Sprinkle the entire box of instant pistachio pudding mix over the coated cereal. Gently fold again until the cereal pieces are lightly dusted with the green powder.
If you are using chopped pistachios, add them now and fold them into the mix.
Place the powdered sugar into a large zip-top plastic bag. Add the coated cereal mixture to the bag. Seal the bag, leaving some air inside.
Shake the bag vigorously until all the cereal pieces are completely covered in powdered sugar.
Spread the finished Pistachio Puppy Chow onto a baking sheet lined with parchment paper to cool and set before serving or storing.
