This hot, layered dip combines savory ground beef, creamy beans, and bold Tex-Mex spices, topped with gooey melted cheese. It is perfect for Super Bowl snacks, potlucks, and any gathering where you need an easy, flavorful dip that disappears fast.

  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1 can (16 ounces) refried beans, regular or fat-free
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup sour cream
  • 1 can (4 ounces) diced green chiles, drained
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Mexican blend cheese (for topping)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease. Stir in the taco seasoning and water according to the packet directions. Set the seasoned beef aside.
  2. In a medium bowl, combine the softened cream cheese, sour cream, and drained green chiles. Mix until smooth and fully combined.
  3. Spread the refried beans evenly in the bottom of a 9-inch pie plate or a small slow cooker insert.
  4. Spread the cream cheese mixture over the layer of beans.
  5. Spoon the seasoned ground beef mixture evenly over the cream cheese layer.
  6. Sprinkle the Monterey Jack cheese and cheddar cheese blend over the beef layer. Top with the remaining Mexican blend cheese.
  7. Bake at 375 degrees Fahrenheit for 20 to 25 minutes, or until the dip is heated through and the cheese is melted and bubbly. If using a slow cooker, cook on low for 2 hours or high for 1 hour.
  8. Serve your hot layered dip immediately with tortilla chips, Fritos, or vegetable sticks.

Notes

  • For a slow cooker version, layer the ingredients as directed in a small (1.5 to 2 quart) slow cooker. Cook on low for 2 hours or high for 1 hour.
  • You can prepare all the layers, except the final cheese topping, a day ahead. Cover and refrigerate. Add the final cheese layer before baking.
  • Use your favorite brand of taco seasoning for the best flavor profile.
