Create a restaurant-style, creamy Marry Me Chicken Pasta using a simple one-pot method. This recipe features tender chicken, sun-dried tomatoes, and a rich Parmesan sauce, making it perfect for a quick weeknight dinner or a romantic date night meal.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 8 ounces penne or rigatoni pasta
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped

Instructions

  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the chopped sun-dried tomatoes and minced garlic to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the white wine (or broth) and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Add the chicken broth and the dry pasta to the skillet. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until the pasta is nearly tender.
  6. Stir in the heavy cream and grated Parmesan cheese. Continue to cook, stirring constantly, until the sauce thickens slightly, about 3 minutes.
  7. Return the cooked chicken to the skillet. Stir in the fresh spinach until it wilts into the sauce.
  8. Remove the skillet from the heat. Stir in the fresh basil. Taste and adjust seasoning if needed.
  9. Serve immediately with extra Parmesan cheese sprinkled on top.

Notes

  • For a richer sauce, use less chicken broth and increase the heavy cream slightly.
  • If you skip the wine, use an equal amount of chicken broth for deglazing the pan.
  • This dish is excellent served with crusty bread to soak up the creamy Parmesan sauce.
