Ingredients
Scale
2 large boneless, skinless chicken breasts, halved horizontally to make 4 thin cutlets
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
2 tablespoons butter
1 small yellow onion, finely chopped
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup sun-dried tomatoes, drained and chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons fresh basil, chopped (for garnish)
Instructions
Season the chicken cutlets evenly with salt, pepper, and garlic powder.
Heat the olive oil and butter in a large, oven-safe skillet over medium-high heat.
Sear the chicken for 4 to 5 minutes per side until golden brown. Remove the chicken from the skillet and set it aside on a plate.
Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer for 2 minutes.
Stir in the heavy cream and bring the sauce to a gentle simmer.
Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and thickened slightly.
Return the chicken to the skillet, nestling it into the sauce. Spoon some sauce over the chicken.
Cover the skillet and let it simmer on low heat for 5 to 7 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
Remove from heat, garnish with fresh basil, and serve immediately over rice or pasta.
Notes
For a Marry Me Chicken Pasta variation, cook 8 ounces of your favorite pasta separately. Toss the cooked pasta directly into the sauce in the skillet before adding the chicken back in.
If you prefer chicken thighs, you may need to increase the simmering time slightly.
You can substitute dried herbs for fresh basil if needed, but add them with the garlic.
