Ingredients
Scale
1 head romaine lettuce, chopped
1 cup shredded iceberg lettuce
1/2 cup thinly sliced red onion
1/2 cup sliced pepperoncini or banana peppers
1/2 cup shredded provolone cheese
1/2 cup sliced salami
1/2 cup sliced pepperoni
1/2 cup sliced ham
1/4 cup Italian Grinder Dressing (recipe below)
1/4 cup shredded Parmesan cheese (for topping)
Instructions
Prepare the Homemade Grinder Dressing first. Combine all dressing ingredients in a jar and shake well until emulsified. Set aside.
Chop all the fresh vegetables: romaine lettuce, iceberg lettuce, red onion, and peppers. Place them in a large bowl.
Add the deli meats (salami, pepperoni, ham) and provolone cheese to the bowl with the vegetables.
Pour the prepared Italian Grinder Dressing over the salad ingredients.
Toss everything together thoroughly until all components are evenly coated with the dressing.
Divide the salad into serving bowls. Top each serving with shredded Parmesan cheese. Serve immediately for the best crunch.
Notes
For meal prep, store the dressing separately and combine just before serving to keep the lettuce crisp.
You can substitute the meats with turkey or roast beef for a different flavor profile.
This recipe is naturally low carb and high protein.
