Make classic comfort food with this easy slow cooker Salisbury steak recipe. Juicy ground beef patties simmer in a rich mushroom and onion gravy, creating a hearty, budget-friendly family dinner perfect for weeknights.

  • 2 lbs ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 medium yellow onion, sliced
  • 8 oz cremini mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme

Instructions

  1. In a large bowl, combine the ground beef, egg, breadcrumbs, milk, salt, pepper, garlic powder, and Worcestershire sauce. Mix gently until just combined; do not overmix.
  2. Form the mixture into 6 oval-shaped patties, about 1 inch thick.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the patties for 2-3 minutes per side until browned. You may need to do this in batches.
  4. Transfer the seared patties to your slow cooker.
  5. In the same skillet, add the sliced onion and mushrooms. Cook until softened, about 5 minutes.
  6. Sprinkle the flour over the vegetables and stir for 1 minute.
  7. Slowly whisk in the beef broth, soy sauce, and thyme until the gravy thickens slightly. Bring to a simmer.
  8. Pour the mushroom gravy evenly over the patties in the slow cooker.
  9. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the beef is fully cooked and tender.
  10. Serve the Salisbury steak and gravy over mashed potatoes or rice for a complete meal.

Notes

  • For a quicker stovetop version, skip the slow cooker and simmer the patties in the gravy on the stovetop over low heat for 20 minutes after searing.
  • If you prefer a darker gravy color, substitute 1 tablespoon of the beef broth with 1 tablespoon of dark brown gravy mix.
  • This recipe is excellent for meal prep; store patties and gravy separately for up to 4 days.
