Create impressive, warm, and gooey brie bites using flaky puff pastry and sweet cranberry sauce. This simple appetizer delivers a high flavor impact for minimal effort, perfect for holiday entertaining.

  • 1 sheet frozen puff pastry, thawed
  • 8 ounces brie cheese, cut into small cubes
  • 1/2 cup cranberry sauce (whole berry or jellied)
  • 1 large egg, beaten (for egg wash)
  • Optional: Chopped pecans or a drizzle of hot honey for topping

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet. Cut the pastry into 12 equal squares.
  3. Place each pastry square onto the prepared baking sheet.
  4. Place one small cube of brie cheese in the center of each pastry square.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce.
  6. Fold the corners of the pastry up over the filling to meet in the center, pinching the edges together to seal the bite. You can trim excess dough if needed to form a neat bundle.
  7. Brush the tops of the sealed brie bites lightly with the beaten egg wash. This helps them brown nicely.
  8. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed and the cheese inside is melted and gooey.
  9. Remove from the oven. If desired, immediately top each warm bite with a sprinkle of chopped pecans or a small drizzle of hot honey.
  10. Serve these crowd pleasing party starters warm.

Notes

  • You can prepare these brie bites ahead of time by assembling them completely, placing them on a tray, and chilling them for up to 4 hours before baking. Add a few extra minutes to the bake time if baking directly from the refrigerator.
  • For a different flavor profile, substitute the cranberry sauce with fig jam or a thin slice of prosciutto before sealing the pastry.
  • If you do not have puff pastry, you can use refrigerated crescent roll dough, cutting each triangle into quarters and shaping them around the filling.
