  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped red onion
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, seeded and minced (optional)

Instructions

  1. Combine the rinsed black beans, black-eyed peas, thawed corn, chopped tomatoes, red onion, bell pepper, and cilantro in a large bowl.
  2. In a separate small bowl, whisk together the olive oil, lime juice, ground cumin, salt, black pepper, and minced jalapeño, if using, to create the zesty lime dressing.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Gently toss all ingredients until they are evenly coated with the dressing.
  5. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
