Make restaurant-quality chicken parmesan at home with this simple baked recipe. You get crispy, cheesy cutlets without the mess of deep frying.

  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
  2. Set up a standard breading station: Place flour in one shallow dish. Whisk eggs in a second shallow dish. In a third shallow dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, garlic powder, salt, and pepper.
  3. Dredge each chicken cutlet first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the cutlet firmly into the breadcrumb mixture to coat both sides completely.
  4. Brush both sides of the breaded cutlets lightly with olive oil. Place them on the prepared baking sheet.
  5. Bake for 15 minutes.
  6. Remove the chicken from the oven. Spoon about 1/4 cup of marinara sauce over the top of each cutlet. Top each with slices of fresh mozzarella and a sprinkle of extra Parmesan cheese.
  7. Return the chicken to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
  8. Serve immediately over your favorite pasta.

Notes

  • For extra crispy results, you can briefly pan-sear the breaded cutlets in a hot skillet with a little oil for 1 minute per side before topping and baking.
  • Use high-quality marinara sauce for the best flavor in this easy chicken dinner idea.
  • If you prefer a thinner cutlet, slice the chicken breasts horizontally after pounding them.
