Make this simple, cheesy Rotel dip using only three core ingredients. It is a quick appetizer perfect for game day, parties, or any gathering where you need a crowd-pleasing warm dip.

  • 1 (10 ounce) can Rotel Original Diced Tomatoes and Green Chilies, undrained
  • 1 (16 ounce) package Velveeta Pasteurized Prepared Cheese Product, cut into cubes
  • 1 pound ground beef or bulk pork sausage (optional, for a heartier dip)

Instructions

  1. If using meat, brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease completely.
  2. Transfer the cooked meat (if used) to a slow cooker or a medium saucepan.
  3. Add the entire can of undrained Rotel tomatoes and the cubed Velveeta cheese product to the slow cooker or saucepan.
  4. If using a slow cooker, cook on LOW for 2 hours or on HIGH for 1 hour, stirring occasionally until the cheese is fully melted and the dip is smooth.
  5. If using a saucepan, heat over low heat, stirring constantly until the cheese is completely melted and the mixture is smooth. Do not boil.
  6. Serve the warm dip immediately with tortilla chips, crackers, or sturdy vegetables.

Notes

  • For a creamier texture, you can substitute half of the Velveeta with 8 ounces of softened cream cheese.
  • If you are making this dip ahead of time, transfer the mixture to a slow cooker and keep it warm on the ‘Keep Warm’ setting for serving at your party.
  • Drain the Rotel tomatoes if you prefer a thicker queso dip consistency.
