1 pound ground beef
1 medium onion, chopped
1 (10.5 ounce) can condensed cream of mushroom soup
1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
1 (15 ounce) can black beans, rinsed and drained
1 cup water
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
6 cups Nacho Cheese Doritos, lightly crushed
2 cups shredded cheddar cheese, divided
1 cup shredded Monterey Jack cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
Stir the cream of mushroom soup, Ro-Tel, black beans, water, chili powder, cumin, salt, and pepper into the skillet with the meat mixture. Bring the mixture to a simmer and cook for 5 minutes, stirring often.
Remove the skillet from the heat. Gently fold in 4 cups of the crushed Doritos and 1 cup of the shredded cheddar cheese into the meat mixture.
Spread the mixture evenly into the prepared baking dish.
In a separate bowl, toss the remaining 2 cups of crushed Doritos with the Monterey Jack cheese and the remaining 1 cup of cheddar cheese. Sprinkle this cheese and chip mixture evenly over the top of the casserole.
Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly golden.
Let the Dorito casserole rest for 5 minutes before you serve it.
Notes
For a spicier dish, use hot Ro-Tel or add 1/4 teaspoon of cayenne pepper to the meat mixture.
You can substitute ground turkey or shredded cooked chicken for the ground beef.
If you prefer a different flavor, substitute Cool Ranch Doritos for the Nacho Cheese flavor, but reduce the added salt slightly.
