  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 2 medium potatoes, peeled and diced
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Optional: Shredded cheddar cheese for topping

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Add the beef broth, diced tomatoes (with juice), black beans, kidney beans, corn, and diced potatoes to the pot.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 to 25 minutes, or until the potatoes are tender.
  6. Remove the pot from the heat. Stir in the heavy cream until fully combined and the soup is creamy.
  7. Season with salt and pepper to your preference.
  8. Serve hot, topped with shredded cheddar cheese if desired. This is a great soup and cornbread pairing.

Notes

  • For a slow cooker cowboy soup variation, brown the beef and sauté the onion/garlic first. Transfer everything except the cream to the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in the cream before serving.
  • Add a dash of hot sauce or a pinch of cayenne pepper for a smoky flavor profile.
