  • 1 large egg
  • 1 scoop chocolate protein powder (about 25g)
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 tablespoon chocolate chips (optional, for topping)

Instructions

  1. Combine the cottage cheese and egg in a microwave-safe mug or small ramekin. Blend or whisk until completely smooth. You want no visible curds.
  2. Add the protein powder, cocoa powder, sweetener, vanilla extract, and baking powder to the smooth mixture. Stir well until just combined and no dry pockets remain.
  3. If using, sprinkle the chocolate chips on top.
  4. Microwave on high for 60 to 90 seconds. Cooking time varies based on microwave wattage. Start checking at 60 seconds. The brownie is done when the top looks set and is no longer wet.
  5. Let the brownie cool in the mug for 2 minutes before eating. This helps the texture set.
