Instructions

  1. Prepare the streusel: In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Place the streusel in the refrigerator while you prepare the dough.
  2. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. Make the cookie dough: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2 minutes.
  5. Beat in the egg, vanilla extract, and 1/2 teaspoon cinnamon until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
