Moist Cinnamon Swirl Quick Bread Recipe (Yeast Free)

Create a soft, buttery, and perfectly swirled cinnamon bread loaf using this easy quick bread method. This yeast free recipe is ideal for beginners and makes a wonderful breakfast or cozy treat.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or milk with 1/2 teaspoon lemon juice added)
  • For the Swirl: 1/2 cup packed brown sugar
  • For the Swirl: 1 tablespoon ground cinnamon
  • For the Swirl: 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredients and the buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix.
  6. Prepare the cinnamon swirl filling: In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon.
  7. Pour half of the batter into the prepared loaf pan. Drizzle half of the melted butter over the batter, then sprinkle with half of the cinnamon sugar mixture.
  8. Gently spread the remaining batter over the cinnamon layer. Drizzle with the remaining melted butter and sprinkle with the remaining cinnamon sugar mixture. Use a knife to gently swirl the layers together once or twice.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For an extra sweet finish, mix 1 cup powdered sugar with 2 tablespoons milk and drizzle over the cooled loaf.
  • This moist bread recipe works well when baked as muffins; reduce the baking time to 20-25 minutes.
  • Use quality cinnamon for the best warm spiced bread flavor.
