Create this vibrant, moist Christmas Poke Cake using Jello for festive red and green layers. This easy recipe starts with a cake mix and is perfect for holiday gatherings and potlucks.

  • 1 box white cake mix (plus ingredients listed on box)
  • 1 cup boiling water
  • 1 package (3 oz) red gelatin (like Jell-O)
  • 1 package (3 oz) green gelatin (like Jell-O)
  • 1 cup cold water, divided
  • 1 container (8 oz) frozen whipped topping, thawed
  • 1/4 cup Christmas sprinkles

Instructions

  1. Prepare the white cake according to the package directions for a 9×13 inch pan. Bake and let the cake cool on a wire rack for 15 minutes.
  2. While the cake cools, prepare the gelatin. In separate bowls, dissolve the red gelatin in 1/2 cup boiling water and the green gelatin in 1/2 cup boiling water. Stir each until fully dissolved.
  3. Add 1/4 cup cold water to the red gelatin mixture and 1/4 cup cold water to the green gelatin mixture. Set aside to cool to room temperature, about 30 minutes. Do not let it set.
  4. Use a wooden skewer or the handle of a wooden spoon to poke holes all over the warm cake, spacing holes about 1 inch apart.
  5. Carefully pour the cooled red gelatin mixture evenly over half of the cake surface. Pour the cooled green gelatin mixture evenly over the other half of the cake surface.
  6. Refrigerate the cake for at least 3 to 4 hours, or until the gelatin is completely set.
  7. Once set, spread the thawed whipped topping evenly over the top of the cake.
  8. Sprinkle the Christmas sprinkles over the whipped topping before serving.

Notes

  • For a richer flavor, use sweetened condensed milk mixed with a little water to pour into the holes before adding the Jello.
  • You can substitute the whipped topping with cream cheese frosting for a denser topping.
  • Make this a make ahead holiday cake by preparing it the day before serving.
