  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1/2 cup finely chopped water chestnuts
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped green onions, white parts only
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 head butter lettuce, leaves separated and washed
  • Optional: Extra green onions (green parts) and chopped peanuts for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is fully browned and no pink remains. Drain off any excess grease.
  3. Add the water chestnuts, mushrooms, and white parts of the green onions to the skillet. Cook for 3 to 5 minutes until the vegetables soften slightly.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, and black pepper to create the sauce.
  6. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly. Cook for 2 to 3 minutes, allowing the sauce to thicken slightly.
  7. Remove the skillet from the heat.
  8. Arrange the washed lettuce cups on a serving platter. Spoon the savory chicken filling into each lettuce cup.
  9. Garnish with the remaining green onions and chopped peanuts, if using. Serve immediately.

Notes

  • For a crispier texture, you can substitute ground turkey for the ground chicken.
  • If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes when you add the garlic and ginger.
