2 cups cooked chicken, shredded or cubed
1 (10.5 ounce) can condensed cream of chicken soup
1 cup uncooked long-grain white rice
1 cup chicken broth
1 cup milk
1 cup shredded cheddar cheese, divided
1/2 cup sour cream
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1/2 cup breadcrumbs (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
In a large bowl, combine the cooked chicken, cream of chicken soup, uncooked rice, chicken broth, milk, 3/4 cup of the cheddar cheese, sour cream, garlic powder, pepper, and salt. Mix all ingredients until they are evenly incorporated.
Pour the mixture into the prepared baking dish and spread it into an even layer.
Cover the dish tightly with aluminum foil.
Bake for 45 minutes.
Remove the foil. Sprinkle the remaining 1/4 cup of cheddar cheese and the breadcrumbs (if using) over the top.
Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the rice is tender and the cheese is melted and lightly golden brown.
