1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 tablespoon Cajun seasoning (plus more to taste)
8 ounces linguine or fettuccine pasta
3 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
4 ounces cream cheese, cubed
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley, for garnish
Instructions
Season the chicken pieces evenly with 1 tablespoon of Cajun seasoning.
Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the minced garlic to the same skillet and cook for 30 seconds until fragrant.
Add the uncooked pasta and chicken broth to the skillet. Bring the liquid to a boil, then reduce the heat to medium-low, cover, and simmer for 8 to 10 minutes, stirring occasionally, until the pasta is nearly tender.
Stir in the heavy cream and cubed cream cheese. Cook, stirring constantly, until the cream cheese melts and the sauce thickens slightly.
Return the cooked chicken to the skillet. Stir in the Parmesan cheese until the sauce is smooth and creamy. Taste and add more Cajun seasoning if you desire more spice.
Serve immediately, garnished with fresh parsley.
Notes
For a spicier sauce, add 1/4 teaspoon of cayenne pepper along with the Cajun seasoning.
You can substitute chicken with shrimp for a different flavor profile.
