Create simple, no-bake Buckeye Graham Cracker Bars. This recipe combines creamy peanut butter filling between crunchy graham crackers, all dipped in rich chocolate for a satisfying, quick dessert.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 24 honey graham crackers
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil

Instructions

  1. Prepare the peanut butter filling: In a medium bowl, beat together the peanut butter, softened butter, powdered sugar, vanilla extract, and salt until the mixture is smooth and creamy.
  2. Assemble the bars: Place one graham cracker on a clean surface. Spread about 1 tablespoon of the peanut butter mixture evenly over the graham cracker. Top with a second graham cracker to form a sandwich. Repeat until all graham crackers and filling are used.
  3. Chill the sandwiches: Place the assembled sandwiches on a baking sheet lined with parchment paper. Freeze for at least 30 minutes until the filling is firm.
  4. Melt the chocolate coating: Combine the chocolate chips and shortening (or coconut oil) in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth.
  5. Dip the bars: Remove the chilled sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring most of the surface is coated, leaving a small circle of the peanut butter filling exposed at the top, resembling a classic buckeye.
  6. Set the coating: Return the dipped bars to the parchment-lined baking sheet. Refrigerate for at least 1 hour, or until the chocolate coating is completely set.
  7. Serve immediately or store in an airtight container in the refrigerator.

Notes

  • For an easier dipping process, use a toothpick inserted into the side of the sandwich to hold it while you dip it into the chocolate.
  • If you prefer a firmer filling, reduce the amount of butter slightly.
  • Store these quick dessert assembly recipes in the refrigerator for up to one week.
