  • 2 cups cooked, shredded chicken breast
  • 6 slices bacon, cooked crisp and crumbled
  • 1 cup chopped romaine lettuce
  • 1 large tomato, diced
  • 1/2 cup plain Greek yogurt (for creamy, healthy dressing)
  • 2 tablespoons mayonnaise (optional, for richness)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Optional: 1/4 cup diced celery for extra crunch

Instructions

  1. Cook the bacon until crisp. Drain the fat and crumble the bacon into small pieces. Set aside.
  2. In a medium bowl, combine the shredded chicken, diced tomato, and chopped lettuce. If using, add the celery now.
  3. In a separate small bowl, whisk together the Greek yogurt, mayonnaise (if using), Dijon mustard, garlic powder, pepper, and salt until smooth. This is your creamy dressing base.
  4. Pour the dressing mixture over the chicken and vegetable mixture. Gently fold all ingredients together until the chicken is evenly coated.
  5. Stir in most of the crumbled bacon, reserving a small amount for garnish.
  6. Serve immediately or cover and chill for at least 30 minutes to allow flavors to combine for meal prep.
  7. Garnish with the remaining bacon before serving.
