Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, cream the softened butter and powdered sugar together by hand until the mixture is light and smooth. You do not need an electric mixer for this step.
  3. Gradually mix in the all-purpose flour until a soft dough forms. Do not overmix the dough.
  4. Roll the dough into small balls, about 1 inch in diameter, or press the dough into a 1/2-inch thick rectangle and cut into small squares.
  5. Place the cookies on the prepared baking sheets, leaving about 1 inch between them. You can gently press the top of each cookie with a fork to create a crosshatch pattern if desired.
  6. Bake for 10 to 12 minutes, or until the edges are lightly golden brown. The centers should still look pale.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. These buttery shortbread cookies firm up as they cool.
